For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

For the apple pie filling:

3 large apples, peeled, cored, and diced

½ cup brown sugar

1 teaspoon ground cinnamon

½ teaspoon nutmeg

1 tablespoon lemon juice

1 tablespoon cornstarch

1 tablespoon unsalted butter

For the cheesecake batter:

16 oz cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

Instructions
 

Make the Crust:

    In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated in butter.

      Press Crust into Pan:

        Preheat your oven to 350°F (175°C). Press the crumb mixture firmly into the bottom and slightly up the sides of a 9-inch springform pan. Bake for 8-10 minutes, then remove and allow to cool.

          Prepare the Apple Filling:

            In a medium saucepan over medium heat, melt the tablespoon of butter. Add the diced apples, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Cook until the apples soften, about 5-7 minutes. Remove from heat and let cool.

              Make the Cheesecake Batter:

                In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the granulated sugar, followed by the vanilla extract, mixing well after each addition. Add the eggs one at a time, mixing just until combined. Finally, fold in the sour cream until the batter is smooth.

                  Layer the Cheesecake:

                    Pour half of the cheesecake batter into the prepared crust. Next, spoon the apple pie filling evenly over the cheesecake batter. Carefully pour the remaining cheesecake batter on top of the apple filling, smoothing it out gently.

                      Bake:

                        Bake the cheesecake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and crack the oven door to allow the cheesecake to cool gradually for about 1 hour.

                          Chill:

                            Once cooled, cover the cheesecake and refrigerate for at least 4 hours, preferably overnight, to set completely.

                              Serve:

                                Carefully remove the cheesecake from the springform pan. Slice into wedges and serve plain or with whipped cream on top.
