1 ripe avocado

2 large eggs

1 tablespoon apple cider vinegar

1/4 teaspoon red pepper flakes

1/4 cup pumpkin seeds

1 tablespoon olive oil

Salt and freshly cracked black pepper, to taste

Zest of 1 lemon

Fresh herbs (such as cilantro or parsley), for garnish

Prepare the Spicy Pumpkin Seeds: In a small skillet over medium heat, combine pumpkin seeds and olive oil. Add red pepper flakes and a pinch of salt. Sauté for 3-5 minutes until the seeds are golden and start to pop. Set aside.

    Toast the Bread: While the seeds are cooling, toast the slices of bread until golden brown and crispy. You can use a toaster or a grill pan for an extra smoky flavor.

      Mash the Avocado: In a bowl, scoop out the ripe avocado and mash it with a fork. Mix in a pinch of salt, black pepper, and lemon zest to enhance the flavor.
