Instructions
Preheat your oven to 375°F (190°C).
Cut the zucchinis in half lengthwise and scoop out the center with a spoon, creating a boat shape. Be careful not to pierce the skin.
Season the insides of the zucchini boats with salt, pepper, and garlic powder.
In a mixing bowl, combine the shredded chicken, BBQ sauce, corn, and red onion. Mix until well combined.
Fill each zucchini boat with the BBQ chicken mixture, pressing down gently to pack it.
Place the filled zucchini boats on a baking sheet lined with parchment paper.
Sprinkle the shredded cheddar cheese evenly over the top of each filled boat.
Bake in the preheated oven for about 25-30 minutes, or until the zucchinis are tender and the cheese is melted and bubbly.
Remove from the oven and garnish with freshly chopped cilantro or parsley before serving.
