Instructions
Begin by preparing the jackfruit: Pull apart the jackfruit pieces using your hands or a fork, removing any hard core parts and seeds. The jackfruit should resemble shredded meat.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
Stir in the minced garlic and cook for an additional minute until fragrant.
Add the shredded jackfruit to the skillet along with the smoked paprika, ground cumin, chili powder, salt, and pepper. Mix well to coat the jackfruit with the spices and cook for 5-7 minutes, allowing it to absorb the flavors.
Pour in the barbecue sauce and stir until the jackfruit is well combined. Reduce the heat to low and let it simmer for 10-15 minutes, stirring occasionally, until the jackfruit is tender and the sauce has thickened.
Meanwhile, prepare the slider buns by toasting them lightly if desired.
Assemble the sliders: On each slider bun, spoon a generous amount of the BBQ jackfruit mixture. If desired, top with coleslaw and pickles for added crunch and flavor.
Serve warm with extra barbecue sauce on the side for dipping.
