2 cups fresh strawberries, hulled and sliced

1 cup granulated sugar, divided

2 tablespoons cornstarch

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 pre-made pie crust (store-bought or homemade)

1 tablespoon butter, cut into small cubes

1 teaspoon gelatin (optional, for extra firmness)

Whipped cream (for serving)

Instructions
 

Preheat your oven to 425°F (220°C).

    Roll out your pie crust and place it into a 9-inch pie pan, trimming any excess dough. Prick the bottom with a fork to prevent bubbling.

      In a mixing bowl, combine 1/2 cup of sugar, cornstarch, and gelatin (if using). Mix well.

        In another bowl, add the sliced strawberries, lemon juice, and vanilla extract. Toss to coat the strawberries evenly.

          Sprinkle the sugar mixture over the strawberries and toss again until well combined.

            Pour the strawberry mixture into the prepared pie crust. Dot the top with the small cubes of butter.

              Bake in the preheated oven for 15-20 minutes, or until the filling is bubbly and the crust is lightly golden.

                Once baked, remove from the oven and let the pie cool at room temperature for at least 30 minutes before slicing.

                  Serve slices of the pie topped with a dollop of whipped cream.
