1servingIce cream or whipped cream for serving (optional)
Instructions
Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish or a similar-sized oven-safe dish.
In a large bowl, combine the blackberries, sliced peaches, 1/4 cup of sugar, lemon juice, vanilla extract, cinnamon, and salt. Gently toss until the fruit is well-coated. Pour the fruit mixture into the prepared baking dish.
In another bowl, whisk together the flour, baking powder, and remaining 1/4 cup of sugar.
In a separate bowl, mix the melted butter, milk, and almond extract (if using). Pour this mixture into the dry ingredients and stir until just combined; do not overmix.
Spoon the batter over the fruit mixture in the baking dish. It’s okay if it doesn’t fully cover the fruit; it will spread as it bakes.
Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the batter comes out clean.
Once baked, let it cool for about 10-15 minutes before serving.
Notes
Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream on top. Garnish with fresh blackberries and mint.
