Instructions
In a mixing bowl, combine the shredded chicken, buffalo sauce, and cream cheese. Mix until well incorporated and creamy. Season with salt and pepper to taste.
Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
Place a tortilla in the skillet and sprinkle half of the mozzarella and cheddar cheese evenly over the tortilla.
Spoon half of the buffalo chicken mixture on one half of the tortilla.
Sprinkle some chopped green onions on top of the chicken mixture.
Fold the tortilla in half, pressing down gently to seal it.
Cook for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
Remove from the skillet and repeat the process with the remaining tortillas and filling mixture.
Once all quesadillas are cooked, cut them into wedges.
Notes
Serve with sour cream and extra green onions for dipping.
