Preheat your grill or skillet over medium-high heat.
Season the chicken breasts with Cajun seasoning, salt, and pepper.
Add olive oil to the grill or skillet, then place the chicken breasts on it. Cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from heat and let them rest for 5 minutes.
While the chicken is resting, prepare the salad base. In a large bowl, combine the chopped romaine lettuce and halved cherry tomatoes.
Cut the grilled chicken into strips and add them to the salad bowl.
Toss in the croutons and sprinkle the grated Parmesan cheese over the top.
Drizzle the Caesar dressing over the salad and gently toss everything to combine.
Serve the salad on plates, garnished with freshly chopped parsley for a pop of color.
