Rub the chicken breasts with olive oil and season generously with Cajun seasoning, salt, and pepper.
In a large skillet over medium heat, cook the seasoned chicken for about 6-7 minutes on each side, or until fully cooked and no longer pink in the middle. Remove from the skillet and let it rest for a few minutes.
Once rested, slice the chicken into thin strips.
Lay out the tortillas on a flat surface. In the center of each tortilla, layer the chopped romaine lettuce, half of the cherry tomatoes, sliced Cajun chicken, and a drizzle of Caesar dressing. Sprinkle with Parmesan cheese.
Fold in the sides of the tortilla, then roll it tightly from the bottom up to enclose the filling. Repeat with the remaining tortillas.
Slice each wrap in half diagonally and arrange on a platter. Drizzle any leftover Caesar dressing on top for extra flavor. Garnish with fresh parsley if desired.
