In a large skillet or saucepan, heat the vegetable oil over medium heat.
Add the crumbled turkey sausage and cook for about 5-7 minutes until browned and cooked through. Remove from the skillet and set aside.
In the same skillet, add the chopped onion, bell pepper, and celery. Sauté for about 5 minutes until the vegetables are softened.
Add the minced garlic, Cajun seasoning, dried thyme, and smoked paprika to the skillet. Stir for about 1 minute until fragrant.
Stir in the uncooked rice, ensuring it is well-coated with the vegetable mixture.
Pour in the chicken broth and add the bay leaf. Bring the mixture to a boil.
Once boiling, reduce the heat to low, cover the pan, and let it simmer for about 20 minutes, or until the rice is tender and has absorbed most of the liquid.
After 20 minutes, remove the bay leaf and stir in the cooked turkey sausage. Season with salt and pepper to taste.
Cover and let it sit for an additional 5 minutes off the heat.
Serve hot, garnished with sliced green onions.
