Instructions
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
Add the cubed cold butter to the flour mixture. Use a pastry cutter or your fingertips to mix until the mixture resembles coarse crumbs.
Stir in the shredded cheddar cheese and chopped herbs until evenly distributed throughout the mixture.
In a separate bowl, combine the buttermilk and honey (if using). Pour this into the flour mixture, stirring gently until just combined. Do not over mix; the dough should be slightly lumpy.
Using a spoon or a cookie scoop, drop heaping tablespoons of the dough onto the prepared baking sheet, leaving about 2 inches between each biscuit.
Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown and the biscuits have risen beautifully.
Remove from the oven and let cool for a few minutes before serving.
