Instructions
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
In a large mixing bowl, beat together the eggs, sugars, and vegetable oil until well combined and smooth.
Stir in the grated zucchini and vanilla extract until fully incorporated.
In another bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and ground cinnamon.
Gradually add the dry ingredients to the wet mixture, stirring just until combined. Do not overmix.
Gently fold in the chocolate chips and nuts (if using) until evenly distributed.
Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Serve the muffins warm, dusted with a light sprinkle of powdered sugar.
