Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch square baking pan.
In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
In another bowl, combine the flour, baking powder, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Fold in the diced apples gently into the batter until evenly distributed.
Pour the batter into the prepared baking pan, spreading it evenly.
In a separate small bowl, combine brown sugar, oats, chopped walnuts (if using), and a sprinkle of cinnamon. Mix until combined.
Sprinkle this crumble mixture evenly over the batter in the pan.
Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.
Once baked, remove from the oven and let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
Notes
Slice the cake into squares, dust with powdered sugar, and serve warm with a scoop of vanilla ice cream on the side for an extra treat!
