In a food processor, combine the pitted dates and almond butter. Pulse until the mixture is smooth and well-blended.
Add the rolled oats, shredded coconut, cocoa powder, chia seeds, vanilla extract, and sea salt to the food processor. Pulse until the mixture is fully combined and sticky.
If the mixture is too dry, add a teaspoon of water or additional almond butter; if too wet, add a few more oats.
Once the mixture reaches a consistency that holds together when pressed, scoop out tablespoon-sized portions and roll them into balls using your hands.
Roll each energy bite in additional shredded coconut to coat them evenly.
Place the energy bites on a parchment-lined plate or tray.
Refrigerate the bites for at least 30 minutes to firm up before serving.
