Prepare the Pan: Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal.
Mix Wet Ingredients: In a large bowl, combine the almond butter, honey (or maple syrup), and vanilla extract. Stir until well blended and smooth.
Combine Dry Ingredients: In a separate bowl, mix together the rolled oats, chopped cranberries, chopped pistachios, salt, and cinnamon (if using).
Combine Mixtures: Gradually add the dry mixture into the wet mixture, stirring until all the ingredients are evenly coated.
Press into Pan: Transfer the mixture to the prepared baking dish. Use a spatula or your hands to press it firmly and evenly into the bottom of the dish.
Chill: Place the dish in the refrigerator for at least 2 hours to set.
Cut into Bars: Once set, lift the mixture out of the baking dish using the parchment overhang. Cut into bars or squares.
