Instructions
Begin by placing the pitted Medjool dates in a food processor. Process until they form a sticky paste.
Add the rolled oats, shelled pistachios, dried cranberries, chia seeds, honey, vanilla extract, and sea salt into the processor. Pulse until the mixture is combined and slightly chunky but holds together.
If the mixture seems too dry, add a teaspoon of water at a time and pulse until it becomes a cohesive dough.
Once your mixture is ready, use your hands to shape tablespoon-sized portions into round balls, rolling them tightly.
If desired, roll the energy bites in shredded coconut to coat them for an extra texture and flavor twist.
Place the completed energy bites on a parchment-lined plate or airtight container.
Refrigerate for at least 30 minutes to help them firm up.
Notes
Arrange the energy bites on a wooden board or a decorative plate and garnish with a few whole pistachios and cranberries for a pop of color.
