Instructions
In a medium bowl, mash the ripe avocado with a fork until smooth, leaving some chunks for texture.
Stir in the Greek yogurt, Dijon mustard, lime juice, garlic powder, salt, and pepper until well combined. This will create a creamy dressing.
In a large mixing bowl, combine the cooked chicken, diced celery, chopped red onion, and cilantro.
Pour the creamy avocado dressing over the chicken mixture and gently fold to combine. Ensure all ingredients are evenly coated.
Adjust seasoning with additional salt and pepper if needed.
Cover the salad and refrigerate for about 30 minutes to allow the flavors to meld.
Serve chilled on a bed of lettuce or as a filling in whole grain wraps.

Serve the salad in lettuce cups or bowls, garnished with extra cilantro and a lime wedge on the side for a fresh touch.
