In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.
Season the diced chicken breast with Cajun seasoning, salt, and pepper.
In a large skillet over medium heat, heat 2 tablespoons of olive oil. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
In the same skillet, add the chopped onion, garlic, and red bell pepper. Sauté for about 3-5 minutes until the vegetables are softened.
Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a gentle simmer.
Add the cooked penne pasta to the skillet, followed by the cooked chicken and Parmesan cheese. Toss everything together, allowing the cheese to melt and the sauce to coat the pasta evenly.
Taste and adjust seasoning with additional salt and pepper if necessary.
Remove from heat and stir in the chopped parsley for a fresh finish.
Notes
Serve the creamy Cajun chicken penne in bowls, garnished with additional parsley and a sprinkle of Parmesan cheese on top.
