Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
Stir in the minced garlic and cook for an additional minute, being careful not to let it burn.
Pour in the crushed tomatoes and vegetable broth, and stir to combine.
Add the dried oregano and sugar, then bring the mixture to a gentle simmer. Allow it to cook uncovered for about 15 minutes, stirring occasionally.
After 15 minutes, reduce the heat to low and stir in the heavy cream until fully combined.
Add the cheese tortellini to the pot and cook according to package instructions, usually about 5-7 minutes, until tender.
Once the tortellini are cooked, add the fresh basil, and season the soup with salt and pepper to taste.
Serve hot, garnished with a sprinkle of grated Parmesan cheese and a few fresh basil leaves.
