Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper.
Add the chicken to the skillet and cook for about 6-7 minutes on each side until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
Pour in the diced tomatoes with their juices and stir in the Italian seasoning. Let it simmer for about 3-4 minutes.
Lower the heat and stir in the heavy cream, followed by the grated Parmesan cheese. Mix well until the cheese is melted and the sauce becomes creamy.
Add the fresh spinach and cook until wilted, about 2-3 minutes.
Return the cooked chicken to the skillet, covering it with the creamy tomato spinach sauce. Let it heat through for another 2-3 minutes.
Taste and adjust seasoning with salt and pepper.
Serve the dish warm, garnished with fresh basil leaves on top.
