Instructions
Preheat your oven to 400°F (200°C).
After rinsing the chickpeas, spread them on a clean kitchen towel and pat dry to remove excess moisture. This helps achieve maximum crispiness.
In a mixing bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir to form a marinade.
Add the dried chickpeas to the bowl and toss until they are evenly coated with the oil and spices.
Spread the chickpeas in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for about 20-25 minutes, shaking the pan halfway through to ensure even cooking, until they are golden brown and crispy.
Remove the baking sheet from the oven and immediately sprinkle the grated Parmesan cheese over the hot chickpeas, tossing to coat them evenly.
Return the chickpeas to the oven for an additional 5 minutes to allow the cheese to melt slightly.
Once done, remove from the oven and let cool for a few minutes. Garnish with chopped fresh parsley for added flavor and color.
