Preheat your oven to 220°F (104°C). Line two baking sheets with parchment paper for easy cleanup.
Wash and dry the apples. Using a mandoline slicer or a sharp knife, slice the apples very thinly (about 1/8 inch thick). Remove any seeds.
In a mixing bowl, combine the granulated sugar, ground cinnamon, and a pinch of salt.
Drizzle the lemon juice over the apple slices to prevent browning and add a bit of freshness.
Toss the apple slices in the cinnamon-sugar mixture until well coated.
Lay the apple slices in a single layer on the prepared baking sheets, ensuring they do not overlap.
Bake in the preheated oven for about 1½ to 2 hours, flipping the chips halfway through until they are golden and crispy. Keep a close eye on them to prevent burning.
Once finished, remove the apple chips from the oven and let them cool completely on the baking sheets. They will become crispier as they cool.

Serve in a decorative bowl or tall glass and garnish with a sprinkle of cinnamon.
