2 cups fresh strawberries, hulled and sliced

2 tablespoons granulated sugar (divided)

2 cups all-purpose flour

2 tablespoons baking powder

1/2 teaspoon salt

1/3 cup unsalted butter, cold and cubed

1 cup heavy cream (plus extra for serving)

1 teaspoon vanilla extract

Prep the Strawberries: In a medium bowl, combine the sliced strawberries with 1 tablespoon of granulated sugar. Gently toss and let them macerate for about 15-30 minutes, allowing their juices to develop.

    Make the Shortcake: Preheat your oven to 425°F (220°C). In a large mixing bowl, whisk together the flour, baking powder, salt, and remaining 1 tablespoon of granulated sugar.

      Incorporate Butter: Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.

        Add Cream: Pour in the heavy cream and vanilla extract. Using a fork, gently mix until the dough comes together. Do not overwork the dough.
