Ingredients

acorn squashes, halved and seeds removed

garlic, minced

olive oil

teaspoon
dried thyme

teaspoon
dried rosemary

smoked paprika
to taste
salt and pepper

fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 400°F (200°C).
In a small bowl, mix together the minced garlic, olive oil, dried thyme, dried rosemary, smoked paprika, salt, and pepper.
On a baking sheet lined with parchment paper, place the acorn squash halves cut side up.
Brush the garlic herb mixture generously over the insides of each squash half.
Turn the acorn squash over (cut side down) and roast in the preheated oven for 25-30 minutes, until they are fork-tender.
Remove the baking sheet from the oven and carefully flip the squash halves back to cut side up.
Roast for an additional 10-15 minutes until they are nicely caramelized and golden brown.
Once done, remove from the oven and sprinkle with fresh parsley for an extra burst of flavor and color.
Notes
For extra flavor, you can add a sprinkle of Parmesan cheese before serving.
