Instructions
Preheat your oven to 200°C (400°F).
In a large bowl, combine the olive oil, minced garlic, dried thyme, dried rosemary, paprika, salt, and pepper. Mix well to create a herb oil.
Add the cleaned mushrooms to the bowl and toss them in the herb oil until they are well-coated.
Spread the mushrooms evenly on a baking sheet, making sure they are in a single layer for even roasting.
Roast the mushrooms in the preheated oven for 15-20 minutes, or until they are golden brown and tender. Stir the mushrooms halfway through the cooking time to ensure they roast evenly.
Once cooked, remove the mushrooms from the oven and let them cool for a minute.
Plate the roasted mushrooms and sprinkle freshly chopped parsley on top for added flavor and color.
Notes
Serve in a rustic wooden bowl or on a white platter. Drizzle extra olive oil before serving.
