Cook the Noodles: Bring a pot of water to a boil. Add the soba noodles and cook according to package instructions until al dente, usually about 4-5 minutes. Drain and rinse under cold water to stop the cooking process. Set aside.
Prepare the Sauce: In a small bowl, whisk together soy sauce, rice vinegar, honey (or maple syrup), and minced ginger. Set aside.
Heat the Pan: In a large skillet or wok, heat the sesame oil over medium-high heat.
Sauté Aromatics: Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
Add Vegetables: Toss in the sliced bell pepper, broccoli florets, snap peas, and julienned carrots. Stir-fry the vegetables for about 5-7 minutes until they are tender yet crisp.
Add Noodles & Sauce: Add the cooked soba noodles to the skillet, followed by the prepared sauce. Toss everything together, ensuring that the noodles and vegetables are evenly coated with the sauce. Stir-fry for another 2-3 minutes until heated through.
Garnish & Serve: Remove the skillet from heat and sprinkle chopped green onions and sesame seeds over the stir fry. Toss lightly to combine.
