Instructions
In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Mix until smooth and well combined.
In popsicle molds, start by layering a spoonful of the yogurt mixture at the bottom.
Next, add a layer of mixed berries and a few banana slices on top of the yogurt.
Spoon another layer of the yogurt mixture over the fruit, ensuring it's packed in.
Sprinkle a layer of granola on top of the yogurt layer.
Repeat the layering process until you reach the top of the molds. Finish with a final layer of yogurt and a sprinkle of chocolate chips, if using.
Insert popsicle sticks into the molds and cover or seal them as needed.
Freeze the pops for at least 4-6 hours or until completely solid.
To remove the pops, run the molds under warm water for a few seconds and gently pull them out.
Notes
Serve the pops on a beautiful platter or in colorful individual cups, garnished with a few fresh berries and a drizzle of honey on top for an extra touch!
