Instructions
In a large skillet, melt the butter over medium heat.
Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to let it brown.
Add the baby carrots to the skillet, stirring them well to coat with the garlic butter.
Pour the honey over the carrots, then sprinkle in the thyme, salt, and pepper.
Stir to combine, ensuring the carrots are evenly coated in the honey and seasonings.
Cover the skillet and reduce the heat to low. Cook for about 15-20 minutes, or until the carrots are tender, stirring occasionally.
Once the carrots are cooked, remove the lid and increase the heat to medium-high. Let the glaze bubble for 2-3 minutes until it thickens slightly.
Remove from heat and drizzle with lemon juice, then toss to combine.
Taste and adjust seasoning if needed.
Transfer the glazed carrots to a serving dish and garnish with chopped parsley if desired.
