Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, egg, minced garlic, soy sauce, onion powder, garlic powder, salt, and pepper. Mix until all ingredients are well incorporated.
Using your hands, form the mixture into small meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.
Bake the meatballs in the preheated oven for about 20 minutes, or until they are cooked through and golden brown on the outside.
While the meatballs are baking, prepare the honey garlic glaze. In a small saucepan over medium heat, combine honey, soy sauce, rice vinegar, and sesame oil. Stir occasionally until the mixture begins to simmer. Reduce the heat and let it simmer for 5-7 minutes until slightly thickened.
Once the meatballs are finished baking, carefully transfer them to the saucepan with the glaze. Gently toss the meatballs in the sauce until they are thoroughly coated.
Allow the meatballs to simmer in the glaze for an additional 2-3 minutes to absorb the flavors.
Remove from heat and transfer the glazed meatballs to a serving dish.
Notes
