Instructions
Preheat your oven to 425°F (220°C).
In a large mixing bowl, combine the cubed sweet potatoes, olive oil, honey, minced garlic, smoked paprika, black pepper, and salt.
Toss the sweet potatoes until they are well coated in the mixture.
Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for 25-30 minutes, turning halfway through, until the sweet potatoes are golden and tender.
Once out of the oven, let the sweet potatoes cool for a few minutes before transferring them to a serving platter.
Garnish with fresh parsley and serve warm.
