Instructions
Begin by bringing a large pot of salted water to a boil. Once boiling, add the broccolini and blanch for 2 minutes until bright green and tender-crisp.
Drain the broccolini and immediately transfer it to an ice bath to stop the cooking process. Once cooled, drain again and set aside.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using), sautéing for about 1 minute until fragrant, being careful not to let the garlic burn.
Add the blanched broccolini to the skillet and toss to coat evenly with the garlic oil. Sauté for an additional 3-4 minutes until heated through.
Remove the skillet from heat and stir in the lemon zest and lemon juice. Season with salt and pepper to taste.
Transfer the broccolini to a serving platter, sprinkle with grated Parmesan cheese (or nutritional yeast), and garnish with lemon slices.
Notes
For a vegan option, substitute Parmesan cheese with nutritional yeast.
