Instructions
Start by washing the broccolini thoroughly and trimming the thicker ends. Set aside.
Heat 2 tablespoons of olive oil in a large skillet over medium heat.
Once hot, add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
Quickly add the broccolini to the skillet and toss it in the garlic oil for about 2-3 minutes until bright green and slightly tender.
Sprinkle in the red pepper flakes if using, followed by the lemon zest and juice. Toss to combine well.
Season with salt and pepper to taste. Cook for an additional 2-3 minutes until the broccolini is tender yet crisp.
In a separate small pan, lightly toast the pine nuts over medium heat, stirring frequently, until golden brown (approximately 3-4 minutes).
Transfer the broccolini to a serving dish and sprinkle toasted pine nuts and parmesan cheese on top. Drizzle with the remaining olive oil if desired.
Notes
Add parmesan cheese for extra flavor if desired.
