Add the shrimp to the bowl and toss them in the marinade until evenly coated. Let them marinate for about 15-20 minutes for the flavors to meld.
Line a baking sheet with parchment paper for easy cleanup. Spread the marinated shrimp evenly on the baking sheet in a single layer.
Roast the shrimp in the preheated oven for 8-10 minutes, or until they turn pink and opaque. Be careful not to overcook, as shrimp can become tough.
Once done, remove from the oven and garnish with freshly chopped parsley and additional lemon slices if desired.
