Instructions
In a large mixing bowl, combine the drained and rinsed chickpeas with the halved cherry tomatoes, diced cucumber, and chopped red onion.
Add the chopped parsley to the bowl and gently toss to mix all the ingredients.
In a small bowl, whisk together the olive oil, fresh lemon juice, lemon zest, black pepper, and a pinch of salt to create the dressing.
Pour the dressing over the salad mixture and toss everything together until well coated. Adjust the salt and black pepper as needed.
Allow the salad to rest for 10 minutes to let the flavors meld before serving.
Notes
Serve the salad in a large bowl or on individual plates. Garnish with lemon wedges and extra parsley.
