Instructions
Prepare the Marinade: In a blender, combine the diced mango, habanero peppers, honey, soy sauce, lime juice, garlic, and ginger. Blend until smooth to create the marinade.
Marinate the Wings: In a large bowl, place the chicken wings and pour the mango habanero marinade over them. Toss to ensure all wings are well coated. Cover with plastic wrap and marinate in the refrigerator for at least 1 hour, preferably overnight for deeper flavor.
Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil and place a wire rack on top.
Prepare the Wings for Baking: Remove the wings from the marinade, letting any excess drip off. Place the wings in a single layer on the wire rack. Season with salt and pepper to taste.
Bake the Wings: Bake the chicken wings in the preheated oven for 25-30 minutes, or until they are golden brown and crispy. Flip the wings halfway through cooking for even crisping.
Final Touch: If desired, toss the cooked wings in a little extra marinade for added flavor before serving.
Serve and Garnish: Plate the wings and garnish with chopped cilantro. Serve with lime wedges on the side for an extra zesty kick.
