Instructions
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the cubed sweet potatoes and diced apples.
Drizzle the maple syrup and olive oil over the sweet potato-apple mixture.
Sprinkle in the ground cinnamon, nutmeg, salt, and pepper. Toss everything together until the sweet potatoes and apples are evenly coated.
Spread the mixture out on a large baking sheet in a single layer.
Bake in the preheated oven for 25-30 minutes, or until the sweet potatoes are fork-tender and the apples have caramelized. Stir halfway through for even roasting.
If using, add chopped pecans in the last 10 minutes of roasting for extra crunch.
Once done, remove from the oven and let cool for a few minutes.
Transfer to a serving dish and garnish with fresh thyme leaves.
