Instructions
In a large mixing bowl, combine the grated carrots and raisins (or currants).
In a smaller bowl, mix the cumin, cinnamon, coriander, cayenne pepper, olive oil, lemon juice, salt, and pepper to create a spiced dressing.
Pour the dressing over the carrot mixture and toss well to ensure the carrots are well-coated.
Add the chopped cilantro and sliced nuts to the salad, gently folding them in for extra texture and flavor.
Let the salad sit for about 10-15 minutes to allow the flavors to meld while you prepare your serving dishes.
Taste and adjust seasoning if necessary by adding more salt, pepper, or lemon juice as desired.
