Instructions
Prepare the Cream Filling: In a mixing bowl, beat the heavy whipping cream until soft peaks form. Gradually add powdered sugar and vanilla extract, continuing to whip until stiff peaks form. Set aside.
Cream Cheese Mixture: In another bowl, beat the softened cream cheese until smooth. Add the mint extract and sour cream, mixing until thoroughly combined. Carefully fold in the whipped cream mixture until smooth. Then, gently fold in the mint chocolate chips, being cautious not to deflate the mixture.
Layer the Lasagna: In a 9x9 inch square dish, start by placing a layer of chocolate graham crackers at the bottom. Then spread half of the mint cream cheese mixture over the crackers, smoothing it evenly.
Second Layer: Add another layer of chocolate graham crackers over the cream cheese mixture. Repeat with the remaining mint cream cheese mixture, smoothing it out evenly over the second layer. Finally, top it off with a final layer of chocolate graham crackers.
Chill: Cover the lasagna with plastic wrap and place it in the fridge for at least 4 hours, ideally overnight, to allow the flavors to meld and to set the layers.
Serve: Once chilled, slice into squares and garnish each piece with grated dark chocolate or cacao nibs and a mint leaf to elevate the presentation.
