Instructions
Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking pan or line it with parchment paper for easy removal.
In a large mixing bowl, combine the creamy peanut butter, brown sugar, and granulated sugar. Mix until smooth and well combined.
Add in the egg and vanilla extract, mixing until fully incorporated.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
Gradually add the dry mixture into the peanut butter mixture, stirring until just combined. Be careful not to overmix.
Fold in the chocolate chips and crushed peanuts (if using) until evenly distributed throughout the batter.
Pour the batter into the prepared baking pan, smoothing it out with a spatula.
Bake in the preheated oven for 20-25 minutes or until the edges are golden brown and a toothpick inserted into the center comes out clean or with just a few moist crumbs.
Allow the blondies to cool in the pan for about 15 minutes before transferring them to a wire rack to cool completely.
Once cooled, cut into squares and serve.
Notes
Optional crushed peanuts can be added for extra crunch.
