Instructions
In a mixing bowl, combine the rolled oats, ground flaxseed, and a pinch of salt. Stir until well mixed.
In a separate bowl, combine the peanut butter, honey (or maple syrup), and vanilla extract. Mix thoroughly until smooth and creamy.
Pour the wet mixture into the dry ingredients and stir until everything is well coated and evenly combined.
Gently fold in the chocolate chips until evenly distributed throughout the mixture.
Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.
Press the mixture evenly into the bottom of the prepared dish, making sure it is tightly packed.
Refrigerate for at least 1 hour to allow the bars to set properly.
Once firm, lift out the parchment paper and cut the mixture into bars or squares of your desired size.
Store in an airtight container in the refrigerator for up to a week or freeze for longer storage.
Notes
Arrange the energy bars neatly in a stack or on a platter, and serve them with a small bowl of extra chocolate chips on the side for a fun touch!
