Instructions
Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
In a medium saucepan over low heat, combine honey (or maple syrup) and peanut butter. Stir until melted and smooth.
Remove the saucepan from heat and stir in brown sugar, vanilla extract, salt, and cinnamon until well mixed.
In a large mixing bowl, combine rolled oats, chocolate chips, chopped nuts, and shredded coconut (if using).
Pour the peanut butter mixture over the dry ingredients and stir until everything is well coated.
Spread the granola mixture evenly on the prepared baking sheet.
Bake in the preheated oven for about 20-25 minutes, stirring halfway through to ensure even browning. Keep an eye on it as it can burn quickly.
Once golden brown and fragrant, remove from the oven and let it cool completely on the baking sheet.
Once cooled, break the granola into clusters and store in an airtight container.
Notes
Serve in a mason jar or bowl, and sprinkle some extra chocolate chips and nuts on top for an appealing look.
