0.25cupchocolate chips (dark, semi-sweet, or milk chocolate)
0.25cupground flaxseed
0.5teaspoonvanilla extract

0.25cupchopped nuts or seeds (optional)
Instructions
In a large mixing bowl, combine rolled oats, ground flaxseed, and a pinch of salt. Stir well to mix the dry ingredients evenly.
In a separate bowl, whisk together the peanut butter, honey or maple syrup, and vanilla extract until smooth.
Pour the wet mixture into the bowl with the dry ingredients and stir until fully combined. The mixture should be thick and sticky.
Fold in the chocolate chips and any optional chopped nuts or seeds you wish to add.
With clean hands, scoop out small portions (about 1 tablespoon each) of the mixture and roll them into balls. Place the balls on a parchment-lined baking sheet.
Once all the mixture is shaped into balls, refrigerate for at least 30 minutes to firm them up.
Store the energy balls in an airtight container in the fridge for up to a week, or freeze for longer storage.
