Instructions
In a large mixing bowl, combine the rolled oats, ground flaxseed, and salt.
In a small saucepan over low heat, warm the peanut butter and honey (or maple syrup) until they're easily blendable and smooth. Remove from heat and stir in the vanilla extract.
Pour the peanut butter mixture into the bowl with the oats and flaxseed. Mix thoroughly until everything is evenly coated.
Fold in the mini chocolate chips and any optional toppings you desire.
Line a muffin tin with paper liners or grease it lightly. Use a tablespoon to scoop the mixture into each muffin cup, pressing it down firmly to compact.
Place the muffin tin in the refrigerator for at least 30 minutes to allow the energy cups to set.
Once set, carefully remove the cups from the tin and store them in an airtight container in the fridge.
