In a large mixing bowl, combine the rolled oats, almond butter, pumpkin puree, honey (or maple syrup), pumpkin pie spice, and vanilla extract. Mix thoroughly until well combined.
Add the ground flaxseeds and a pinch of salt to the mixture, stirring until evenly distributed.
If desired, fold in the mini chocolate chips for an extra treat.
Using your hands, roll the mixture into small balls, about 1 inch in diameter.
Place the energy bites on a baking sheet lined with parchment paper.
Once all the mixture is rolled into balls, refrigerate them for at least 30 minutes to firm up.
