2 lbs chicken thighs, boneless and skinless, cut into bite-sized pieces

1 cup plain yogurt

2 tablespoons garam masala

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon turmeric powder

1 teaspoon cayenne pepper (adjust for spice preference)

4 cloves garlic, minced

1 inch ginger, grated

1 large onion, finely chopped

1 can (14 oz) crushed tomatoes

1 cup coconut cream

1 tablespoon lemon juice

2 tablespoons vegetable oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Instructions
 

In a medium bowl, mix the yogurt, garam masala, cumin, coriander, turmeric, cayenne pepper, garlic, and ginger together until well combined.

    Add the chicken pieces to the marinade, coating them well. Cover and refrigerate for at least 1 hour (or overnight for best results).

      In the slow cooker, heat the vegetable oil on high for 10 minutes.

        Once heated, add the chopped onions and sauté for about 5 minutes, or until translucent. (If your slow cooker does not have a sauté function, you can do this step on the stovetop.)

          Add the marinated chicken to the slow cooker, stirring to mix with the onions.

            Pour in the crushed tomatoes and coconut cream, stirring until everything is well combined.

              Season with salt and pepper to taste, then cover the slow cooker and set it on low for 6-8 hours, or high for 3-4 hours, until the chicken is tender and cooked through.

                Once cooked, stir in the lemon juice and adjust seasoning if needed.

                  Serve hot, garnished with fresh cilantro.
