Instructions
In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sauté until the onion is translucent (about 3-4 minutes).
Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned, breaking it apart with a wooden spoon (about 5-7 minutes).
Stir in the chopped chipotle peppers, cumin, smoked paprika, cayenne pepper, salt, and pepper. Mix well to ensure the beef is evenly coated with the spices. Cook for an additional 3-4 minutes until fragrant.
While the beef is cooking, warm the corn tortillas in a separate skillet over low heat, flipping them occasionally until pliable.
To assemble the tacos, place a generous scoop of the chipotle beef onto each tortilla. Top with shredded lettuce, diced tomatoes, and crumbled feta or cotija cheese.
Garnish with fresh cilantro and serve with lime wedges on the side for squeezing over the tacos. Enjoy!
