In a mixing bowl, combine the rolled oats, coconut milk, mashed banana, shredded coconut, honey (if using), vanilla extract, and a pinch of salt. Stir well to combine all the ingredients.
Fold in the sliced strawberries gently to distribute them throughout the mixture.
Divide the mixture evenly into two jars or airtight containers. Seal them tightly with lids.
Refrigerate the jars overnight (or at least 4 hours) to allow the oats to soak up the liquid and soften.
In the morning, give the oats a good stir. If the mixture is too thick, add a splash of coconut milk to reach your desired consistency.
Top with additional sliced strawberries, a sprinkle of shredded coconut, and mint leaves for a fresh touch before serving.
