Instructions
In a mixing bowl, combine the softened cream cheese, sliced strawberries, powdered sugar, and vanilla extract. Mix until smooth and well incorporated.
Take 4 slices of the bread and generously spread the strawberry cream cheese mixture on each slice. Top with the remaining bread slices to create sandwiches.
In another bowl, whisk together the eggs, milk, cinnamon, and salt until well blended.
Heat a large skillet or griddle over medium heat and add butter, allowing it to melt and coat the surface.
Dip each sandwich into the egg mixture, ensuring both sides are well-coated.
Cook the sandwiches in the skillet for about 3-4 minutes on each side, or until golden brown and cooked through.
Once cooked, remove the French toast from the skillet and let it rest for a minute.
Cut the stuffed French toast in half diagonally and serve warm with a drizzle of maple syrup. Garnish with additional strawberries and a dusting of powdered sugar.
