In a blender, combine the halved strawberries and sliced kiwis. Blend until smooth and a little chunky, depending on your texture preference.
Strain the blended fruit through a fine mesh sieve into a large pitcher to separate the juice from the pulp. Use a spoon to press down on the pulp to extract maximum juice.
Add the fresh lime juice and honey or agave syrup to the fruit juice in the pitcher. Stir well until the sweetener is fully dissolved.
Slowly pour in the cold sparkling water, stirring gently to combine without losing too much carbonation.
Taste the limeade and adjust sweetness with more honey/agave or acidity with more lime juice if desired.
Serve the strawberry kiwi limeade over ice cubes in tall glasses and garnish each glass with fresh mint leaves for a refreshing touch.
