Instructions
In a large skillet, heat the olive oil over medium heat.
Add the chopped onion and sauté for 2-3 minutes until it becomes translucent.
Stir in the minced garlic and diced bell pepper, cooking for an additional 2 minutes.
Add the ground turkey (or beef) to the skillet, breaking it apart with a spoon as it cooks. Cook until browned and no longer pink (about 5-7 minutes).
Sprinkle the taco seasoning over the meat mixture, then add the black beans and corn. Stir to combine and cook for another 3-5 minutes until everything is heated through. Season with salt and pepper to taste.
While the meat mixture simmers, prepare the lettuce cups by gently separating the leaves and washing them thoroughly.
To assemble, spoon the meat mixture into a lettuce leaf and top with avocado slices, diced tomato, and shredded cheese.
Garnish with fresh cilantro and a squeeze of lime juice for added zest.
Serve with lime wedges on the side for an extra burst of flavor.
